We are located in Chittoor, and if you have ever been here, you know how much people love their food. I work at the Taj Samarkand restaurant, and the kitchen is basically my second home. From the early morning, we are busy chopping onions, cleaning rice, and getting the stoves going. The heat from the burners is intense, but you get used to it after the first hour. It is a loud place, with the clattering of pots and the shouts of orders coming in from the front. We get a big rush during lunch, mostly people working in the nearby offices or travelers passing through Andhra Pradesh. Chittoor can be a very busy town, and our restaurant sits right in the middle of that energy. I spend a lot of time making sure the ingredients are fresh and that the tables are wiped down properly. We aren't trying to be some five-star fancy place; we just want to serve a meal that tastes like it was made with some care. Sometimes the tandoor is too hot, or we run out of a certain dish before the day is over, and we just have to apologize and keep going. It is hard work, standing on your feet for ten hours a day, but there is a good feeling when the dining room is full of people enjoying their lunch. We are just a local team doing our best every day to keep people fed and happy.
