Running Swaminarayan Food out of Nijanand Nagar is mostly about timing. We are situated right by Avishkar Hospital, so we see a lot of people who are having a rough day. It makes you think about things a bit differently. The morning starts with getting the kitchen ready and making sure the vegetables delivered are fresh. I usually handle the inventory myself because things tend to get misplaced if I don't keep an eye on them. It’s a decent-sized space but feels cramped when we have a lot of orders going out at once. The neighborhood is generally quiet except for the sounds of ambulances. Sometimes the power goes out unexpectedly and we have to scramble to keep everything from spoiling in the heat. That’s probably the most stressful part of the whole job. I don’t have much time for breaks, usually just a quick chair sit in the corner with a glass of water when the lunch rush ends. The staff here are mostly local people from around this part of town. We’ve all worked together for a bit now, so we know each other's habits well. Dealing with food means you’re always cleaning something. Whether it’s the counters or the big cooking pots, the work never really ends. We just stay focused on the task at hand. It’s not a glamorous life, but it keeps us busy from sunrise until the late evening hours when we finally close up.
