We are located at A-22 on Carter Road No 7 in Malad West. It’s a specific part of the neighborhood that has its own rhythm. The shop has a big grill that stays hot for most of the day, which makes the front area pretty warm. We try to keep the windows open, but Malad West can get a bit dusty with all the construction going on nearby. Most of our day is spent prepping the meat and making sure the coal is just right. There is a specific way the spices have to be mixed, and if one of us does it slightly differently, the boss usually notices. The walls are painted a light color, but they get stained near the kitchen area no matter how much we scrub them. We have a few tables out front on the sidewalk, but sometimes the local authorities ask us to move them back an inch or two. It’s a bit of a back-and-forth. The sink in the back has a slow drain, so we have to be careful not to pour too much down there at once. We get a lot of people stopping by after work on their way home. It’s just a straightforward place where the focus is on the fire and the food. Nothing is really automated; we do everything by hand, from cutting the bread to stacking the skewers. It's hard work but we are used to it.
