Slice Of Lime

We are set up at Shalibhadra Society on Arjun Ashram Road in Nirnay Nagar, Malad West, though the address also mentions Ahmedabad. It is a busy little spot where we handle a lot of food orders every day. The kitchen is always buzzing with the sound of knives chopping and pans sizzling. We called it Slice of Lime because we use a lot of fresh citrus in our cooking. It is a small team here and we all know our roles pretty well. Most of our customers are people living in the society or nearby buildings. We have a few tables out front but a lot of people just take their food to go. The smell of ginger and garlic usually hangs in the air around the entrance. We try to keep the menu simple so we can get things out fast. Sometimes the deliveries get a bit backed up when it rains but we do our best. It is not a fancy restaurant with waiters in suits. It is just a practical kitchen where we make meals for the local crowd. We spend our mornings checking the vegetables and making sure the stove is working right. It is a lot of standing and moving around but we like being part of the neighborhood. The sun hits the front of the shop in the morning and that is when we start our prep work for the rest of the day.
