Our place is located over at Seacroft on Sherly Rajan Road. It’s a bit of a specific spot in the building here, up on the seventh floor. Most people who live around this part of the city know the road well because it gets quite busy with traffic. We have been running things here for a while, just trying to keep everything moving. It is not like those big fancy chains you see in the malls. We are just a local operation. Sometimes the elevator takes a bit of time to get up here, but that is just part of being in an older building. We spend most of our mornings checking the stock and making sure the kitchen is ready for the day. It gets quite warm in Mumbai, especially in the afternoons, so we keep the fans going at full speed. We have a few staff members who have been with us since we opened. They know how everything works and where every pot is kept. We don't really have a fancy website or anything like that. Usually, people just hear about us from their neighbors or friends at work. It’s a quiet enough spot once you are inside, away from the noise of the street traffic below. We just focus on getting the cooking done right every single time. Every now and then we change a few chairs or paint a wall a different color, but mostly it stays the same. It is just a regular business where we work.
