Live Kitchen

Our spot is at SCO n.o-4 on the Kharar Kurali road, which stays busy almost every hour of the day. Being right near the bus stand means there is a lot of noise and people moving around outside. We focus on the cooking inside this small kitchen. It gets humid and loud with the exhaust fans running and the sound of pans hitting the burners. We handle a lot of orders for people living right here in Kharar and we also send food out toward Chandigarh. It is a lot of coordination between the people taking orders and the ones doing the actual chopping and frying. The walls have some stains from the steam and the floor can get a bit slippery if we aren't careful during the lunch rush. We don't have much of a seating area because the kitchen takes up most of the space. Most of the time we are just packing things into bags and making sure the lids are on tight. The Mohali 140301 weather can be tough in the summer, making the kitchen even hotter than usual. We drink a lot of water and just keep the orders moving. It is a straightforward operation without any decorations or anything like that. People just want their food quickly so they can get back to work or catch their bus. We just keep our heads down and stay busy with the prep work and cleaning. There is always a delivery bike waiting outside by the curb.
