Kentucky Fried Chicken

This is the KFC located inside the Westend Mall in Ludhiana. I am Harish Banyal, and I work here as the assistant restaurant manager. Working in a mall is very different from a standalone shop because you are part of a much bigger building. We have to follow all the mall timings and rules, which keeps us on our toes. The Westend Mall is a very popular spot in Punjab, so it gets incredibly busy on the weekends. You can barely hear yourself think when the crowds come in for lunch or dinner. My day is mostly spent on my feet, making sure the kitchen is running and the front counter is moving quickly. We have a small, cramped office in the back where I sit to do the staff schedules and check the inventory. It is usually full of boxes and the smell of fried chicken. Ludhiana people love their food, so we are rarely quiet. The air conditioning in the mall is good, but the heat from the fryers still makes it quite warm in the back. We have a diverse team of young people working here, and we all just try to get through the rush hours without too much stress. It’s a fast-paced life in the mall, and we see all kinds of people every day. I just focus on keeping the team organized and making sure the orders are correct.
