Aio Masale

We are over here in Shanti Nagar, right across from the Indian Oil Petrol Pump. Most people know the spot because of the smell of the chilies and turmeric we’ve got going on throughout the day. Aio Masale started as a small idea but it’s mostly just us working with what we have in this space in Sarojini Nagar. We spend a lot of time cleaning out the bins and making sure the grinding machines aren't acting up again. It’s a bit noisy inside sometimes. The shop isn't fancy, just a few counters and bags stacked up against the walls. We see a lot of people stopping by after they get fuel for their bikes across the road. Usually, it’s just the same faces every week coming for their regular supplies. We don't really do big advertising or anything like that. We just focus on getting the powders right and keeping things tidy enough for the health inspectors when they drop by. Sometimes the dust gets everywhere, especially when we are packing the finer stuff, so we’re always sweeping. It’s just how it is running a place like this in a busy neighborhood. We stay open until the sun goes down and usually a bit after if people are still knocking. It is honest work and keeps us busy from Monday to Saturday, though we try to finish early when the weather gets too hot in the afternoons and the air gets heavy.
