If you ever find yourself walking near Chawla Chowk in Gandhidham, you will probably see our place. Chawla Cafe is a pretty straightforward setup at D-23. We have got the usual tables and chairs and a kitchen that stays fairly busy, especially during the lunch hours when people are out and about. It is not one of those modern, minimalist cafes you see in the big cities. It is more of a local spot where you can just sit down and eat without worrying about anything fancy. We spend a lot of our time in the mornings doing prep work, like chopping vegetables and getting the stoves ready for the day. The air inside usually smells like spices and whatever we are cooking up at the moment. Being right in Kachchh, we see many of the same faces every day, which is nice. People come in for a quick bite or just to get out of the sun for a little while. We do not have a massive menu with complicated names, just the food we know how to make. Sometimes the street noise outside gets a bit loud, but it is just part of being in this neighborhood. We clean up at the end of every night, mop the floors, and get things ready to do it all over again the next morning. It is hard work being on your feet all day, but we are used to it.
