You can find Yo Dimsum on the 2nd floor of City Mall on Jhalawar Road. It is a bit different from the shops on the street because we are inside the mall. There is air conditioning, which is nice during the summer months in Kota. I spend a lot of time behind the counter watching people go to the movies or just walking around looking at clothes. It gets really busy on the weekends when families come out. During the week, it is mostly students or office workers looking for a quick bite. We focus on dimsums because that is what we do. The kitchen is small, so we have to be very organized to make sure everything stays moving. I usually have one or two people helping me with the steaming and the orders. It is a lot of standing, but you get to talk to many different types of people. Sometimes the mall security or the other shop owners come by to say hello. It feels like a small community inside a big building. We don't have a lot of space for seating, so most people just take their food and eat it while they walk or sit in the food court. It is a simple setup. We just try to keep things running smoothly and make sure we don't run out of ingredients before the day ends.
