Pioneer Chicory (India) Private Limited focuses on chicory, which is a bit different from what most people are used to. It’s a lot of work dealing with roots and drying them out properly. The smell of the roasting is very strong and you can smell it from down the road. It’s a bit earthy and bitter, but we like it. Our building isn't anything special to look at from the outside. It's practical and built specifically for the machines we use. We spend our days watching the dryers and making sure the roots don't burn or get too dry. It’s a slow process that takes a lot of patience. We don't have a big sales team. Most of our customers have been buying from us for a long time. They just call and tell us what they need for the month. We have some local farmers who bring in the raw stuff, so there’s always a bit of talk about the weather and the crops. It’s a quiet kind of business compared to the ones in the big city. We don't have a fancy board of directors or anything. Just a few of us making sure the quality is where it needs to be. We just stick to what we know.
