We open up early every day at our spot in N-2, right near Dor Bazar in Midc. It’s usually quiet when the first batch goes in, just the sound of the ovens warming up. We’ve been here for a bit now, mostly just handling the daily rush of people coming in for their usual loaves or some snacks on their way home. The floors get dusty with flour pretty quick, but that’s just how it is when you’re working with dough all day. It’s a lot of manual work, lifting heavy bags and making sure the temperature is right so things don't burn. Sometimes it gets a bit chaotic behind the counter when the afternoon crowd hits, especially since we’re so close to the bazar. We don’t have any fancy seating or anything like that, just a counter and the shelves where we put out what’s fresh. People know where to find us if they need something for tea time or a quick bite. Most of the staff has been around for a while, so we know the regulars by face. It’s not a big operation, just a kitchen and a small front area. We try to keep things simple and just focus on getting the baking done right. If you’re walking past Dor Bazar, you can usually smell the bread from the street. We just keep our heads down and get to work every morning.
