Garam Masalaa

You can find us at 18-19 on Khatipura Road. It's a decent-sized space, which is good because we need the room. Garam Masalaa has been sitting on this stretch of road for a bit. The mornings are usually the best time here. It’s cooler and the traffic hasn’t really picked up yet. We spend the first hour just getting the kitchen ready and making sure everything is where it should be. The address is easy to remember since it’s just two numbers side by side. We don't spend much on decorations or fancy lighting. It’s mostly just functional tables and chairs that have seen better days but still hold up. People from the nearby residential areas usually stop by. We know many of them by name now. It’s not like those big chain places where nobody knows you. Here, we just do the work. The smells from the spices usually drift out onto the road, which is why people probably notice us. Khatipura Road is always moving. We have some regulars who come in every single day at the same time. It makes the day go by faster when you have familiar faces around. We don't have a website or anything like that. We just focus on the food and the daily chores. Sometimes the rain leaks a little near the back door, but we put a bucket there and it’s fine. It's just a normal place for regular folks. Nothing more.
