Our little place, Coriander, is right in the heart of Malviya Nagar. It is not a very big restaurant, just a handful of tables and a kitchen that stays busy from lunch until late evening. We don't have a team of designers or a big marketing budget. We just have our stoves and the ingredients we buy from the local market every morning. The floors are a bit worn down from all the people walking in over the years. We spend a lot of time prep cooking, like peeling garlic and chopping herbs. It’s the kind of work that never really ends. Sometimes the sink gets clogged or a light bulb flickers, and we have to fix it ourselves. We aren't trying to be the most famous place in the city, we just want to make sure the food tastes right before it goes out. The neighborhood is full of families and students, so we see all kinds of people. Some days are slow and we just sit by the door watching the cars go by in Malviya Nagar. Other times, every chair is full and we are running around trying to keep up. We don't use fancy titles for our staff. We all just help out where we can. It’s a real, working kitchen and things aren't always perfect, but we do our best every day to keep things moving.
