You can find Bhaghat Mishthan Bhandar Private Limited at 30 Kailash Puri, right on the busy Tonk Road in Jaipur. We have been in this spot for a long time now. Being on such a main road means we see the whole city pass by our front door every day. We are a sweets shop and production unit. Every morning starts very early, around four or five, when the milk arrives. We spend the first few hours of the day boiling it down and preparing the base for our sweets. It is a lot of heavy lifting and constant stirring over big fires. The shop part of the building has old glass counters that we spend a lot of time wiping down to keep the fingerprints off. We don't have a modern interior with bright neon lights. It is more of a traditional Jaipur style, simple and functional. Our staff are mostly older men who have been making sweets since they were young. They don't need timers or thermometers; they just know by the look and the feel of the mixture when it is ready. During the festive seasons, the place gets absolutely chaotic, and we end up working through the night to keep the trays full. We don't have a fancy website or a social media page. People come to us because they know the location and they know what to expect from our kitchen.
