If you’ve ever been near the Sarawate Station in Indore, you probably know the area around Reshamwala Compound. It’s always dusty and crowded with people catching trains or buses. That’s where we are, at Dilbahar Ghamandi Lassi. The name sounds a bit funny to some, but it’s been that way for a long time. Our shop at 47-40-A is a small place. We spend most of our morning getting the curds ready. Indore gets really hot in the summer, so the lassi is what keeps everyone going. We don't have air conditioning or anything fancy like that. Just some benches and the big metal containers. My grandfather started something like this and we just kept it going at this spot near the station. People coming off the trains are usually tired and thirsty. They don't want a long menu, they just want something cold and sweet. We use the same thick malai we’ve always used. Sometimes we run out of ice or the power goes out, which is frustrating, but we manage. It’s a noisy street with all the rickshaws honking outside. It isn't a place for a quiet meeting, it's a place to grab a glass and move on. We know the regulars by face, even if we don't know all their names. It’s just a simple life here in Indore, serving lassi to whoever stops by. It is just what we do every day.
