Our office is tucked away at 6/1, Basiruddin Munsi Lane. It is a bit of a tight squeeze in this part of town, but we make it work. Most of the time, the West Bengal Bakers Co-Ordination Committee is just a place where local bakers drop in to talk about flour prices or some new rule that’s making life hard for them. We have a lot of old files stacked up and the chairs don't all match. It's not a corporation, it's more like a group of people who understand what it's like to wake up at 3 AM to start the ovens. There is always someone complaining about the heat or the cost of sugar. We sit around, drink some tea, and try to figure out how to help the smaller shops stay open when things get tough. Basiruddin Munsi Lane is always crowded, so getting here can be a bit of a headache, but everyone knows where we are. We don’t really do fancy meetings with slideshows. It is more about talking face to face and trying to stay organized. Baking is a hard business in West Bengal and people need a place to come together. We try to keep things moving as best as we can without making it too complicated. It’s just us trying to keep the bread moving and the ovens hot across the state.
