Our place is located at Plot No. 39 in Udyog Vihar, Phase-I. It is a big industrial area, so there are always heavy trucks moving and people rushing around the gates. Bakers Circle (India) Pvt. is tucked away among all these other grey buildings. Most days, the big ovens are going very early in the morning. It gets quite warm inside the building, even when we have all the big fans turned on full blast. We do a lot of dough work and baking here every day. It’s a lot of repetitive movement, kneading and traying things up for the ovens. We aren't a small corner bakery where you can sit and have a cup of coffee. We are more of a busy production spot. Everything is about the timing. If the timer goes off and no one is right there to pull the trays, the bread or the snacks won't be right and we have to throw them out. We have a team of people who have been with us for years. They know the rhythm of the machines and they can tell by the smell when a batch is finished. Sometimes the machines break down and we have to fix them ourselves on the fly while the dough is rising. That’s just life in a factory setting. We don't use fancy words or marketing to describe what we do. We just make food products and send them out in the vans. The floor is usually covered in a bit of white flour.
