Plot 74 in Udyog Vihar Phase-1 is where we spend all our time. It’s an industrial spot, so there are always people moving around and things happening next door. We deal with dough, ovens, and baking supplies. The floor is usually covered in a bit of flour by the end of the shift. It gets warm in there because of the machinery, but we’re used to it by now. We aren't a small bakery on a corner; it's a bigger operation than that. We make a lot of stuff for other businesses. The morning shift starts early, usually before the sun is really up. We have trucks pulling in at odd hours to pick up crates. It's a loud place, lots of clanking metal and fans running. Sometimes things break and we have to fix them on the fly. That's just how it is when you're running a food plant. We don't have a glossy brochure or a fancy lobby. If you walk in, you’ll see people in hairnets and aprons working hard. It’s honest work. We’ve been in this part of Udyog Vihar for a while. Everyone knows the smell of bread around here. It’s not a glamorous job, but it’s what we know how to do. We just focus on getting the orders out right and keeping the machines clean. It’s a busy life. We have our regulars and we just keep the ovens going.
