The Great Kabab Factory (Park Plaza Hotel)

We are located inside the Park Plaza Hotel over in Sector 55, Noida. Being inside a hotel means we follow a different rhythm than a street shop. The Great Kabab Factory is in C-Block, and it’s a place where we do a lot of prep work. Every morning, the kitchen team starts by checking the grills. We use a lot of skewers and coal, so there’s always that smell of smoke in the air before the first guest even walks in. It’s a bit of a process. The hotel environment is usually quiet in the hallways, but our kitchen gets noisy. We have people coming in from the local offices in Noida and sometimes people staying upstairs. Our staff wears the uniforms provided by the hotel, and we try to keep everything tidy. It’s a lot of work to keep the grills clean. We don't have a big menu where you pick a hundred different things; we just do what we do. The seating is arranged so people can see each other, nothing too complicated. We’ve been in Sector 55 for a while now, and the roads around here have changed a lot. We just keep doing the same thing every day. It’s about the routine of the fire and the food. We don't spend much time on marketing; we just wait for the dinner rush to start and handle it when it arrives.
