Shama Chicken Biryani

Shama Chicken Biryani is a small shop in Chalera village. We are located on the Main Dadri Road in Sector 44, Noida. You will find us in Saini Market. It’s a very busy local market. We cook chicken biryani in large metal pots every day. You can see the steam coming off the rice when we open the lids. We don't have a lot of room for people to sit down, so many customers just take their food to go. It’s a local spot where people from the village and nearby areas come for lunch or dinner. The traffic on Dadri Road is always heavy. There is a lot of dust and noise from the cars and buses going by. We start prepping the chicken and the spices early in the morning. It takes a long time to get the flavor right. We don't use any fancy machines, just big spoons and fire. The market is full of other shops, but people find us by the smell of the spices. We have a simple counter and some plates. It gets very busy during the lunch hour when the workers from around Sector 44 come by. We just keep serving until the biryani is gone. It’s a lot of work but it’s a good way to spend the day. We wash the pots late at night so we can be ready to do it all again tomorrow. It is hard work but we keep going.
