Rama Dairy is situated right on the Naraina Ring Road at Cb-206/5. If you drive past, you might see our sign near the edge of the road. We get started very early in the morning, usually before the sun is even up, because that is when the milk trucks arrive. It is quite cold in the shop during those hours, especially in the winter. We spend the first few hours of the day unloading crates and getting the milk, curd, and paneer ready for the morning rush. The floor is made of white tiles and we are always washing it down with water to keep things clean. There is a constant hum from the big commercial refrigerators that take up most of the back wall. People from the neighborhood come in with their own containers, or they just grab a few packets before they head to work. It is a very routine kind of job. By the afternoon, things slow down and we spend time cleaning the counters or checking the dates on the cheese and butter. The traffic on the Ring Road never seems to stop, and sometimes the noise is a bit much, but we have gotten used to it over the years. It is a straightforward business with no frills. We just make sure there is fresh dairy for whoever needs it.
