P B Caterers is situated at 26-C in the Sec-30-33 area, right across from IP Colony. We are near the New DLF Industrial Area, so there’s a lot of activity around here with trucks and workers. Our daily routine is tied to the kitchen schedule. We start early because the food needs time to develop its flavor. The location is good for us because it’s easy to get the transport out onto the main roads from here. We handle a lot of the heavy lifting ourselves—moving crates of plates and big jugs of water. The industrial side of things means it can get a bit dusty, so we are always wiping things down. It’s not a glamorous job. You spend a lot of time over steam and getting your clothes stained with turmeric or oil. But we like the work. There’s a certain satisfaction in seeing a hundred plates filled and ready to go. We’ve been in this Sector 30-33 spot for a while, and we’ve seen the area change. More buildings, more traffic. We just keep our heads down and focus on the orders we have for the week. Usually, we are planning two or three days ahead to make sure nothing is missing from the pantry. The heat in the kitchen gets pretty intense during the summer, but we just keep the exhaust fans running and stay hydrated. It’s a simple, honest way to spend the day.
