Karims Hotel

Our place is in Faridabad Sector 12 on Railway Station Road near BK Chowk. Being so close to the station means we see a lot of people just passing through Faridabad. Karims Hotel has been around for a while, and the building at 163 has seen a lot of history. It’s not like those new modern hotels with glass walls. We have heavy pots and old-fashioned stoves because that’s the only way to get the flavor right. The kitchen is the heart of everything we do here. It’s noisy, smoky, and usually very busy. We start the stews and the meat early so it has time to sit. I don’t use a computer for the recipes; it’s all in the head, passed down from my father. We don't have a lot of decorations. People don't come here for the wallpaper; they come for a plate of food that reminds them of home. Sometimes the crowd from the railway station is so big that people have to wait on the sidewalk, but they don't seem to mind much. We just keep serving until the pots are empty. It’s hard work, and my back usually aches by the end of the night, but it’s a good kind of tired. We just keep things the way they’ve always been because that’s what our customers expect from us. It’s been this way since the day we opened the doors, and I don't see any reason to change it now. We just stay focused on the cooking.
