Hot Mirchii is tucked away in Om Shubham Tower on Neelam Bata Road. If you know the NIT area, you know how busy this street can get during the day. We're on one of the floors there, just a small kitchen and some tables for people to sit at. We mostly handle people coming in for a quick lunch or ordering something to take back to their offices in the tower. It gets pretty loud during the lunch hour with the pans clanking and everyone talking at once. We don't have fancy decorations on the walls or anything. It’s just some plain paint and a few chairs that don't all match. The spice in the air can make you sneeze if you're not used to it. We chop a lot of onions and peppers every single day. My hands usually smell like garlic even after I wash them ten times with soap. It's not a glamorous job but it pays the bills and keeps us busy. We've had some regulars for years who always order the same thing without even looking at the menu. If the elevator in the tower is broken, which happens more than I’d like, people have to walk up the stairs. That’s never fun for anyone. We just keep cooking through the heat. Sometimes the delivery guys are waiting in a line out the door. It’s a bit chaotic but we manage to get the food out to everyone. We don’t have any fancy marketing or anything like that.
