We are over at Green Vally Plaza, Shop 17. It’s on the upper ground floor. Mostly, we spend our time in the back getting things ready for whatever event is coming up next. You’ll hear the clatter of large pots and the smell of spices floating out into the hallway. The plaza gets a bit busy in the afternoons, but we are usually focused on the prep work. We handle the cooking and making sure the food is packed right so it doesn’t spill on the way to the venue. It’s a lot of logistics, honestly. Checking the gas, making sure the ingredients are fresh from the market, and keeping the staff moving. Sometimes the orders are big, and we have to start really early when it’s still dark outside. Other times it's a smaller thing, but the work is mostly the same. We don’t have a lot of time for sitting around. Faridabad has plenty of people needing food for their parties, so the phone rings and we get to it. We've been in this shop for a bit now, and we know the layout like the back of our hand. It’s not a huge place, but it works for what we do. We just keep the stoves burning and the deliveries moving out the door one by one. It can get pretty hectic when three orders have to leave at the same time, but we manage to get it done somehow without too much trouble.
