Kanwarjis is located in Saini Enclave, at G-1. We’ve been here for a while, selling all sorts of snacks and namkeen. Most of our work happens in the back area where we fry everything in large batches in big pans. You can smell the spices and the hot oil from the street before you even see the shop. We don’t have a big corporate team; it’s just a few of us making the food and serving the customers. We go through a lot of ingredients every week, mostly things like chickpeas, spices, and flour. The shop itself is quite simple with glass jars and counters to show what we have made fresh. We don’t do any fancy marketing or have a big flashy sign. People in Saini Enclave know where we are. We have a lot of regular customers who stop by on their way home to get something for their evening tea. It gets quite busy in the evenings, and we have to work fast to pack everything into the little bags. We don't use any fancy machines for packaging, it’s all done by hand. Sometimes the floor gets a bit messy from all the flour and oil, so we’re always cleaning up during the slow hours. We don't have a mission statement or a fancy philosophy. We just make the snacks and sell them to whoever comes in. It’s a straightforward business and we just keep doing what we know how to do.
