Khajura Restaurant is tucked inside Hotel Palms over in Diu. Being part of a hotel means we see a lot of people passing through, especially those staying for the weekend. It’s not a fast-paced city life; things move a bit slower near the coast. Our kitchen staff usually gets in early to start the prep work while the hotel is still quiet. We have a set of tables and a bar area that we keep clean. Sometimes the sea breeze carries a bit of salt, which means we are always wiping things down. It’s a practical setup. We aren’t trying to be anything other than a place to eat while you're in the area. The lighting is just standard, and the furniture is what you’d expect in a local Diu spot. We don't have a big marketing team or anything like that. It’s just us and the hotel staff working side by side. Most of our guests are just looking for a meal without any fuss. We spend our evenings making sure everyone has what they need before we close up for the night. It’s a steady job in a nice enough location, and we’ve been here long enough to know the rhythm of the seasons. When it rains, things get quiet, but when it's sunny, the hotel fills up and we stay on our feet.
