You’ll find us at 180 A in Pocket J K of Dilshad Garden, right here in Delhi. This part of the city has a lot of families, so we get many people stopping in on their way home. The space is filled with the sound of the oven timers going off and the clatter of pans. We start early in the morning, getting the dough ready and checking the stock in the fridge. Dilshad Garden can be quite crowded, especially on the weekends, and our little corner gets its fair share of that foot traffic. We have a few tables for people who want to stay, but a lot of what we do is just packing things up for delivery or carry-out. The air inside is always warm because of the ovens, even when it's freezing cold outside in the Delhi winter. We try to keep things clean, but with flour and cheese everywhere, it's a constant battle with the broom. Most of the crew has been here for a while, so we've got a rhythm down for when the big orders hit. It’s a standard setup, nothing fancy about the decor, just a place to get something to eat. We deal with the usual stuff like late deliveries or power flickers, but we just keep the kitchen moving as best as we can. It’s a busy life in Dilshad Garden, and we’re right in the middle of it every evening.
