We operate out of Buxibazar in Cuttack. Specifically, we are in the Tinkona bagicha area, which is tucked away behind the main streets. Catering is a tough job because you are always on your feet and moving heavy pots around. Most of our work happens in the back where the big burners are. It gets incredibly hot back there, especially during the summer months in Odisha. We don't have a storefront where you can come and sit; it’s mostly just us preparing food for weddings or small parties around the city. Sometimes we are cooking for fifty people, other times it’s five hundred. It depends on what the customer needs. I spend a lot of time on the phone talking to vegetable vendors and meat suppliers. We use a lot of local spices that we grind ourselves because that’s just how it’s done here. The van we use for transport is getting a bit old and the engine makes a loud rattling sound, but it gets the food where it needs to go. Cuttack streets are narrow, so navigating the delivery can be a headache sometimes. We aren’t a big corporate company, just a group of cooks and helpers trying to make decent food. It’s a lot of washing up and heavy lifting, but it’s our trade. We usually start our work very early in the morning when the city is still quiet.
