Down in Old Darshani Bagh in Manimajra, you’ll find us at Shop No.171. We run Surbhi Flour & General Mills, so there is usually the sound of the machines humming in the background. The air inside always has a bit of a floury mist to it, which gets on our clothes and hair by the end of the shift. People bring their own grain here to get it ground into fresh flour, and we also sell general items that folks need for their homes. Manimajra is a busy area, but our corner feels a bit more traditional. We’ve been here long enough that the stone floor is worn down in spots from all the people walking in and out. We don’t have fancy packaging; it’s more about the heavy sacks and the grit of the daily work. Sometimes the machines break down and we have to spend the afternoon fixing them with greasy hands, which is just part of the job. It’s not a clean or quiet business, but it’s an honest one that we are used to. We see the same faces every week, and we know exactly how they like their flour ground—fine or a bit coarse. We don’t do much to promote ourselves because the smell of the fresh flour usually does the trick for anyone passing by. It’s just a local mill where we work hard and try to stay on top of the orders that come in from the street.
