Bhikharam Chandmal Bhujiawala

Out here at F-88-89 in the Bichwal Indl. Area, the smell of spices is usually the first thing you notice when you get close to the building. Bhikharam Chandmal Bhujiawala has been operating from this spot for quite some time, making different kinds of snacks day in and day out. It’s a large space because we need the room for the big frying vats and the packing area. Working in food means there is always something to clean or a machine to adjust. The Bichwal area is a bit dusty sometimes, but inside we keep things moving as fast as we can to get the bhujia out to the shops. We have a lot of people working different shifts here. It isn't a quiet place, there’s always the sound of motors and people moving crates around. We don't spend much time on fancy decorations since this is primarily where the actual making happens. We’ve had some long days when the demand goes up during festival times, and everybody just chips in to get the bags filled and sealed. Sometimes the heat from the kitchen area is a lot to handle, but it's part of the trade. We just focus on getting the flavors right using the same old methods we’ve always used. It’s a practical setup at F-88-89, nothing more and nothing less than a place where we make snacks for people to eat.
