Our little setup for Sonal Papad is over at Plot Nio 368/2-A in the Chitra Gidc. It’s a busy place to be, and there is always something happening in this part of town. When you walk into our area, the first thing you probably notice is the smell of the spices and the flour we use for the papads. We spend a lot of our time making sure everything is rolled out just right. It’s a lot of manual work, and our hands are usually covered in flour by noon. We have racks and spaces where things sit to dry out, and we have to keep an eye on the air and the temperature because that changes how the papads turn out. Sometimes the GIDC area gets a bit dusty, so we are always cleaning and making sure the workspace stays proper for food. It’s not a big corporate factory; it’s more like a group of us working together to get the orders finished. We have our routines, like starting early before the sun gets too high and makes the shed too warm. People around here know us as the place that’s always busy with stacks of dough. We don't spend much time on the computer or doing paperwork if we can help it. We’d rather be in the back getting the next batch ready for the bags. It’s hard work, but it feels right when the day is finally done.
