We’ve been running things from 20 Shivani C Street for a good while now. It’s right in the Fort area of Bangalore, which is one of the older parts of the city. You can tell by the narrow streets and the way the buildings are packed together. Our kitchen is always humming with activity. There’s usually the smell of spices in the air from early morning. It’s not a fancy commercial kitchen with stainless steel everything. It’s more of a practical space where we get the cooking done. We handle a lot of different orders throughout the week. Sometimes we are prepping for a small family gathering, other times it’s something bigger. Our pots are big and our stove is always hot. The staff here knows the recipes by heart. We don’t really use fancy measuring tools for everything; we just know how it should taste. Working in Bangalore-02 means we have to navigate the traffic to get the food delivered on time. It can be a real headache, but we’ve found the shortcuts. We don't have a big sales team or anything. Most people find us through word of mouth or just by walking past our door on Shivani C Street. It’s a lot of hard work and long hours on our feet. We just focus on getting the food out the door and making sure people are fed. That is what we do every single day.
