Spice Curry is our little place over in Michalpalayam, Bangalore, in the 560 075 area. We’ve been here for quite some time, just cooking up food every day. It’s not a big fancy restaurant with a lot of staff. It’s just a handful of us who know the recipes and how to run the kitchen. The place is often a bit noisy and smells like roasted spices, which we think is a good sign. We don't have a big marketing budget or anyone to write glossy advertisements for us. We just rely on the fact that people in the neighborhood know our food. Most of our customers are folks who live nearby or work in the local shops. We keep the menu pretty simple because we’d rather do a few things well than a lot of things poorly. The tables and chairs are basic, and we don't spend much on decorations. Some days are stressful when there’s a big rush and the kitchen gets behind, but we just do our best to catch up. Running a small food business in a city like Bangalore isn't always easy, but we’ve stuck with it because it’s what we know. We start early to get the ingredients ready and stay until the last dishes are washed. It’s just a normal, everyday job for us.
