Shree Sai Caterers is tucked away in the 14th Block of Janapriya Layout on Managi Road. It is a bit of a trek to get out here if you are not familiar with this part of Bangalore. Our setup is basically a large kitchen area where we do all the prep work for our orders. There is always a lot of steam and the sound of knives hitting cutting boards. We wake up really early, often before the sun is even up, to start the first batch of cooking. It takes a lot of effort to get the rice and curries just right in such big quantities. We use these massive stainless steel containers that are quite heavy to move around. My hands often smell like garlic and turmeric even after I have finished for the day. We don't have a fancy website or a big marketing team, we just rely on people telling their friends about the food we make for their parties or weddings. Sometimes the orders are small, just for a few families, and other times we are cooking for hundreds of guests. The traffic on Managi Road can be a nightmare when we are trying to load the van, but we make it work. It is just a small group of us working hard to get the food out. It is a messy, loud, and hot job, but it is what we know. We just keep our heads down and cook.
