Our setup is at No. 38, right on the 1st Street Main, 4th Cross in Rajarajeswari Nagar. We’re tucked away in the B. H. E. L. Layout, which is a pretty settled area. Sai Mushrooms is all about the growing process. It’s dark and damp in the rooms where the mushrooms are, so we spend a lot of time in that environment. It’s not for everyone, but we’ve gotten used to the humidity. We have to be very strict about cleanliness, so there is a lot of scrubbing floors and washing trays. It’s quiet work, mostly. We don’t have big meetings; we just check the beds and see how things are sprouting. The 4th Cross is a narrow street, so we have to be careful when the delivery vans come to pick up the fresh harvest. We start very early because mushrooms don’t wait for anyone, and they need to be fresh when they get to the market. The neighbors are mostly families, so we try not to make too much noise in the mornings. It’s a small team, and we all know what needs to be done without being told. No one wears a tie here. We’re usually in boots and practical clothes. It’s a simple life, watching things grow and making sure the temperature stays just right. We’ve been in RR Nagar for a while and like the quietness of the layout.
