We are over here in Neelasandra, right at Madhu Nivas on 4th Cross. It’s a busy spot in Hanumanthappa Garden. Most days start early with the dough and getting the ovens hot enough. It gets pretty loud back there when the orders start coming in. We’ve been at this address in Bangalore-47 for a while now. Some of the guys have been here since the start. It isn't always pretty, and sometimes the phone rings off the hook while we're scrambling to get boxes folded. Keeping things moving is the main goal. The traffic on the cross can be a mess in the evenings, which makes deliveries a bit of a headache for the riders. They know the shortcuts though. When there's a breather, we keep the counters wiped down and the floor swept. It’s just a regular kitchen setup. Nothing fancy about the back room where we take breaks. The usual stuff like power cuts or running out of napkins happens. People from the neighborhood drop in, some stay to eat and some just wait by the door. That’s pretty much how it goes every day. We close up late and do it all again. It's just us making food and trying to get it to the right houses without getting lost in the lanes around here. Sometimes we get the order wrong and have to fix it fast. We just want to get through the rush without any big disasters.
