Pastry At Taj Residency

Working at the pastry shop inside the Taj Residency on MG Road means we are always in the middle of everything. Bangalore’s 41/3 MG Road is a very busy spot, so there is never a quiet moment. We start pretty early in the morning when the rest of the city is just waking up. You can usually smell the flour and sugar as soon as you walk in. It’s a lot of standing on your feet all day, mixing dough and watching the ovens. We aren't trying to be overly fancy, even though we are in a well-known building. It’s mostly just hard work and making sure the cakes and breads come out right. Sometimes a batch doesn't turn out perfect, and we have to start over. That’s just how baking goes. The counter gets crowded in the afternoons when people are looking for a snack after work. We try to keep up with the rush, but sometimes there's a bit of a wait. It is a small space to work in, so we are always bumping into each other. We’ve been at this for a long time now. Most of the regulars know us by name. It is just a regular pastry shop doing its best to keep the shelves full. We don't have any big secrets, just a lot of flour and a lot of early mornings. It is hot by the ovens and the floor gets messy, but we just keep at it until we are done for the day.
