Our kitchen is over at Varun Apartments on Venugopal Street in the Mugappair neighborhood. It is a pretty normal residential area and we have been here for some time now. We spend most of our mornings getting everything ready for the food orders that go out later. The space is always filled with the smell of different spices and there is usually a lot of chopping and cleaning going on. It is a small team and we all know our roles pretty well by now. We do not have a fancy office with big windows; it is just a practical workspace where we get the cooking done. Sometimes it gets a bit cramped when we have a big delivery to prepare, but we make it work. We try to be quiet so we do not bother the other people living in the apartments. Most of our day is spent on our feet, washing vegetables or packing up containers. It is hard work and by the end of the shift, we are all quite tired. We do not really do much marketing or anything like that. People mostly find out about us through word of mouth or seeing our delivery vans around. We just focus on making sure the food is cooked right and sent out to the right places on time. It is a simple way of working but it keeps us very busy every single day.
