We operate out of Thekooden House in Thrissur. If you're familiar with this part of Kerala, you know it’s a busy place with its own pace. Our work involves a lot of food preparation and organization, mostly for the airline industry. It’s not like a regular restaurant where you see the customers eating. We are behind the scenes, making sure everything is packed and ready to go. The kitchen is always active, and there’s a lot of noise from the equipment. We have to be careful about the timing because planes don't wait for anyone. Sometimes it gets stressful when there’s a big order and we’re short-staffed, but we find a way to get it done. The building itself is just a regular spot in Thrissur, and we’ve been here long enough that the locals know what we do. We don't have any fancy awards on the wall or a big reception desk. It’s mostly stainless steel tables and storage units. The staff comes from all over the district, and we mostly speak Malayalam in the kitchen while we work. It’s hot and fast-paced, and by the end of the shift, everyone is pretty tired. We just try to keep everything clean and follow the lists we’re given. It’s hard work, but it’s what we do here in Kerala every single day.
