We just want to make sure that when someone sits down to eat or stays with us, they feel like they’re being looked after by real people. Faruk and the rest of the crew are usually around, making sure things don’t fall apart. It gets busy, and sometimes it’s a bit chaotic, but that’s part of the charm. We don’t use scripts or have a long list of rules for how to talk to guests. We just say hello and help out. The location might not be on every map with a big star, but we’re here, doing the work every day. It’s about keeping things simple and making sure the quality stays where it should be.
