We are tucked into the Gidc Estate at 63/2 in Jayanagar Phase 1. Being in an industrial area means our day follows the factory whistles. We open up early to get the tea and breakfast ready for the morning shift. It is a practical setup with metal tables and benches. We do not have any decorations on the walls, just the calendar and maybe a clock that is usually a few minutes fast. The cooking is done in the back in large batches. We mostly serve simple meals that fill people up for their workday. It is a lot of dal, rice, and vegetables. We do not use too much oil or spice, just enough to make it taste like home. The heat from the estate can be quite a bit in the summer, so we try to keep the windows open and the fans running. You will not find any fancy plating here; the food goes on the plate and gets eaten quickly. We know most of the guys from the nearby units by their first names. It is a steady routine for us. We clean up after the lunch rush, prep for the next morning, and head home when the sun starts to go down. It is honest work, and we have been doing it at this same spot for a long time now. There is no need for anything more than a decent meal and a place to sit for twenty minutes.
