Out here at Kishangarh Madanpur, things feel a bit different than being in the middle of town. Superior Malt Pvt Ltd sits outside Katla, where there is a bit more space for trucks to turn around. It is a lot of hard work dealing with the grain and the processing machines. The noise is constant once we get everything running in the morning. It’s a heavy smell, sort of earthy and sweet, that sticks to your clothes all day. We spend a lot of time checking the temperatures and making sure the bags are sealed properly so nothing goes to waste. The office is just a small room with a desk that’s covered in papers and sample jars. We don't really have time for sitting around much. Someone is always shouting over the machinery or checking the loading bay. Outside Katla, the wind picks up a lot of sand, so we have to keep the doors shut as much as possible. Sometimes the power goes out and everything goes silent, which is almost weirder than the noise. We just wait for the generator to kick in or for the line to come back up. It is mostly just a cycle of loading, unloading, and keeping an eye on the clock. By the time we finish, the sun is usually setting behind the factory buildings and we’re all ready to get home and wash off the dust.
