Royal Paneer & Milk

Working down here near the Kalupur Railway Station Road is something else. Royal Paneer & Milk is located at 603/9/1, right by the Surya Kiran Hotel in Ghee Bazar. It is one of the busiest parts of the city, and the noise from the station never really stops. You can hear the trains and the porters and the constant flow of people moving through the bazar. Our shop is right in the middle of all that dust and activity. We focus a lot on the paneer, which we keep in large tubs of water to stay fresh. The floor is almost always a bit damp because of it. It’s a cramped space, honestly, with bags and containers piled up wherever they fit. The walls have some stains from years of work, and the ceiling fan wobbles a bit when it’s on the high setting. We start very early because that’s when the fresh milk comes in from the trucks. Everything is very manual here. We don't use many machines, just our hands and some basic tools to weigh and pack things. It’s hard work, and your back usually hurts by the end of the shift. The Ghee Bazar area is crowded and the air is thick with the smell of spices and exhaust, but it’s where we’ve always been. We don’t have time for fancy talk, we just keep moving until the work is done.
