Down in Bawana, things are always a bit loud because of all the units running at once. We are at Plot 44, Khasra 154, not far from the MBH Hospital. At Deokali Kitchen Equipments, we mostly spend our time around sheets of stainless steel and welding torches. It’s a manufacturer unit, so it’s more about the smell of burnt metal and the sound of grinders than anything else. We make the big stoves and counters you see in commercial kitchens. The floor is concrete and usually covered in metal shavings by noon. We start early because the heat in Pooth Khurd gets pretty bad by the afternoon. Usually, someone is banging a hammer against a sink frame to get the angle just right. It is a lot of manual work. We don't have an office with AC; we just have a desk tucked in the corner with a lot of papers and drawings. Customers usually come by to check on their orders and we show them the progress on the workshop floor. Sometimes a delivery truck gets stuck in the narrow lane outside, and everyone has to go out and help. It’s just a regular day of fabrication and packing things up to be sent out. The tea stall nearby is where we spend our breaks, talking about the next big kitchen setup we have to build. It’s a lot of sweat but we get the orders done eventually.
