Commi-I

My name is Virender Kumar and I work as a Commi-I here in the Vikaspuri area. If you are not in the food business, that basically means I am one of the people in the kitchen doing the actual cooking and the prep work. It is not like what you see on the television shows. It is mostly about chopping piles of vegetables, making sure the sauces are ready, and keeping the station clean while things get hectic. Our spot in New Delhi-110018 is where I spend most of my hours. It gets very hot in the kitchen, and there is always a long list of orders waiting to be filled. I have been doing this for a bit now, learning how things work. It is a lot of standing on your feet and making sure the food goes out looking the way it should. We do not have a big fancy dining room with waiters in suits here. It is more about the hard work that happens behind the scenes. Sometimes I am here early in the morning to start the prep, and other times I am the last one out after cleaning the grills and the floors. People around here really like their food. I try to make sure everything I touch is done properly. It is just me and the team trying to keep up with the rush. It is a bit messy sometimes and the pressure is real when the tickets start printing fast, but that is the job and I enjoy the rhythm.
