Shree Jaihind Farsan Mart

Shree Jaihind Farsan Mart is located in the Pratap Nagar area of Vadodara. It is a busy part of town, so we see a lot of traffic. We get to the shop early to start the burners. There is a lot of prep work involved in making farsan. We have to sift the flour and mix the spices just right. The kitchen is right there, so you can see the steam and the large pots. We have different sections for the various snacks we sell. The floor is usually covered in a bit of flour by the end of the shift. We have a basic weighing scale that has been with us for a long time. People from the offices nearby often come in during their breaks. We pack everything in simple plastic bags. Sometimes we run out of change, so we have to ask people for smaller notes. It gets quite warm inside because of the cooking, but we have a small fan that helps a little. The walls are a plain color and we have some shelves for the pre-packaged items. Pratap Nagar is a place where people are always in a hurry, so we try to be quick. We don't have any fancy displays or bright lights. It is just a workplace where we make food for the local community. We stay open until the evening when the street finally starts to quiet down.
