You will find Sahu Masala Udyog over on Kali Bawri Cement Road at number 10. The smell of ground spices is usually the first thing you notice before you even see the sign. We have been grinding and mixing here for quite some time now. It is a dusty job and by the end of the day, everyone usually has a bit of turmeric or chili powder on their clothes. We use some old machines that make a lot of noise, but they do the job better than the new ones sometimes. The neighbors don't seem to mind the sound too much. We aren't some big factory with robots. It is just a few of us and a couple of grinders. We buy the raw stuff, clean it, and then get to work. My brother handles the deliveries and I stay here to watch the machines. Sometimes the power goes out and we have to wait around, but that is just how it goes on Cement Road. We don't have a fancy office or a secretary to answer phones. If the phone rings, one of us just wipes our hands and picks it up. We sell to the local shops mostly. People know us for being consistent. We don't try to be fancy. We just make masala and try to do it right every single time. The bags are heavy and our backs hurt sometimes, but it is good work. We have a small radio that plays old songs while we work. It helps pass the time when we have a big order of turmeric to grind.
