Jumbo Vada Pav'.

Jumbo Vada Pav'. is situated right opposite A-One Garden on University Road in Udaipur. It is a great spot because of all the students and people walking in the garden. We start early prepping the potatoes and the garlic chutney. The smell of the deep fryer usually fills the air by mid-morning. It is a small place, mostly just the counter and the kitchen area. We do not have much seating, so most people just stand around the sidewalk or take their food to the garden. The university crowd keeps us on our feet, especially in the afternoons when classes let out. We go through a lot of buns and green chilies every single day. Udaipur gets very hot, so we try to keep some cold water around for ourselves and the customers. The sign is bright, but the shop itself is very simple. We spend most of our time over the hot oil, making sure the vada pavs are ready as fast as people order them. Sometimes the queue gets long and people have to wait a bit. We just keep working through it. The rain sometimes makes things difficult, but we have a small awning that keeps the counter dry. We have been on University Road for a while and have seen the garden change over the seasons. It is a noisy, busy, and hungry part of Udaipur, and we are right in the middle of it.
